Do cooking times change when I scale a recipe?
Often a little. A bigger batch in a bigger pan may need more time; a smaller one may need less. Use doneness signs (color, internal temperature, a toothpick test) rather than the clock.
Can I scale baking recipes?
Yes, for most cakes, cookies and muffins. Leavening scales fine up to about double; for larger batches, bake in several pans rather than one deep pan.
What do I do with half an egg?
Whisk one egg and use half of it, about 2 tablespoons. For three quarters of an egg, use about 3 tablespoons.
Should I scale spices and salt exactly?
When multiplying by more than 2, start with about 75% of the scaled salt and spice, then taste and add more.
